Situated in the village of Grezillac, which is located on a hill-side between Saint-Emilion and the river Dordogne, this vineyard covers an area of 12 hectares of clay-chalky soil and chalky subsoil. The wine is aged for one year in stainless steel tanks, followed by a further year in oak barrels (aged between one year and 5 years). The wine-maker, Francois Menaut, neither filtrates his wine in order to retain all its aromatic potential. This requires precise racking (“soutirage”) of the tanks and barrels. Once the wine is in the barrels, it is topped up monthly.
