Chablis
The Seguinot family has been producing wine in their 13 hectare vineyard in the village of Maligny, 8 kilometres north of Chablis, since at least the 18th century. I have chosen, together with Jean-Francois Bordet, the young owner (to whom his grandfather, Roger Seguinot handed over the reins in 1998) a cuvée of Petit Chablis and Chablis exclusively for Wine Story Limited, which we have chosen to call Domaine du Charmoy, the name of an area in Chamilly. The vineyard benefits from land rich in calcium and sediments and Jean-Francois places particular emphasis on obtaining the best fruit possible, through careful pruning and harvesting. He practices cool fermentation and allows his wine to mature for 3 to 5 months on their lies, which maximizes the circulation of the aromas in the wine.

Reminiscent of the scented freshness of a lovely summer’s morning. The flowers open gently before us as we pick the delicate, ripe peaches and apricots and notes of verbena lead us on to discover fine scents of under Perfect harmony of maturity, mellowness and vivacity. The flowers and fruit reappear, enhanced by charming biscuity notes. The mineral touch, fine and airy, shows through well on the finish to accompany our thirst and pleasure right to the end.
